Abstract
Nutritional Components and Antioxdative Properties of Brassica napus According to Drying Methods Moon Ga Kyung Advisor : Prof. Joomin Lee PhD. Major in Nutrition Education Graduate School of Education Chosun University This study compared and analyzed the biochemical components, total polyphenol content, total flavonoid content, and antioxidant power according to the drying method of hot air drying and freeze drying using rapeseed. When analyzing the general components of rapeseed according to the drying method, moisture and carbohydrates were high in rapeseed hot air dry extracts, and the content of quencher, crude fat, and crude protein was significantly high in rapeseed lyophilized extracts. Looking at the essential amino acids among the constituent amino acids of rapeseed, the highest content of rapeseed hot air dry extract is Lysine, and the highest content of rapeseed lyophilized extract is Leucine. In nonessential amino acids, glutamic acid was highest in both rapeseed hot-dried and rapeseed lyophilized extracts. The contents of both total essential and nonessential amino acids were high in rapeseed lyophilized extracts. A total of 17 things were detected in the organic acid analysis. The total organic acid content was higher in rapeseed lyophilized extract (26.31g/100g) than in rapeseed hot air dry extract (17.99g/100g). Glutamic acid was found to be the main organic acid in rapeseed hot air dry extract and rapeseed lyophilized extract. As for the fatty acids of rapeseed extract, the saturated fatty acids in both hot and freeze-dried extracts had the highest content of Heenicosanoic acid (18.28g and 38.38g). Total monounsaturated fatty acids were high in rapeseed lyophilized extracts (2.94 g/100 g), and total polyunsaturated fatty acids were high in rapeseed hot air dry extracts (77.13 g/100 g). The main minerals of rapeseed extract according to the drying method showed the highest contents in the order of potassium, magnesium, and calcium. The total content of minerals was 5763.90 ppm of rapeseed hot air dry extract and 5520.98 ppm of rapeseed freeze dry extract, showing a high content in rapeseed hot air dry extract.
